Makes 1 Gallon

· Guava (1 lb.)
· Water (1 gallon)
· Dried Hibiscus flowers (2 oz.)
· Cinnamon sticks (1 oz.)
· Hawthorn Apple (Tejocote) (8 oz.)
· Sugar Cane (8 oz.)
· Tamarind (3 oz.)
· Apple (2 oz.)
· Pitted dry prunes (2 oz.) (elective)
· Brown sugar (piloncillo) or Sugar (8 oz.)

Pour water into a big pot. Add hibiscus flowers and cinnamon sticks. Carry to a boil.

Take away the hibiscus flowers and cinnamon sticks from the pot.

Add the brown sugar cubes and tejocotes and decrease the flame.

Prepare dinner over a sluggish, rolling boil till the tejocotes are tender, it can take about 5 minutes. Add the tamarinds, prunes and sugar cane items.

Reduce the guava into halves after which into 3 little items every half.

Reduce the Apple and the sugar cane into small cubes & add them to the pot. Stir to mix and let simmer for not less than half-hour.

Style and add sugar if obligatory.

To serve the Ponche, ladle immediately into mugs, ensuring to incorporate the chunks of cooked fruit. .
