It’s essentially a method to make feta taste even creamier, and in a type that suggests you can spread it on or dip it in whatever! The best appetiser!

  • Usage as a dip for veggies such as carrots, cucumber, celery and peppers
  • Load it onto pita bread, pita chips or crackers

PRO POINTER The addition of a bit of water makes this a smooth, velvety dip with the best texture. You can include more water if you wish to thin is out even more an turn it into more of a pourable sauce.

Serve the dip as it is, or you can fill it with garnishes – such as sesame seeds, fresh herbs or lemon passion – or as I’ve I have actually done on the image listed below, a little drizzle of olive oil.

DIRECTIONS

  • Location the feta, cream cheese, garlic, olive oil, lemon juice and water into the bowl of a little food mill.

    200 g (7oz) block of feta cheese, 100 g (3.5 oz) cream cheese, 1 little clove garlic, 3 tablespoons olive oil, 1 teaspoon lemon juice, 3 tablespoons cold water

  • Blend together up until smooth. If you would like a thinner consistency, include more oil or a splash of water.

  • Transfer to a bowl and work as it is, or drizzle over a little olive oil or spray on some black pepper if you like.

Wish to include some garnishes?

  • Spring with sesame seeds, pine nuts or sliced pistachios
  • Zing up the flavour with chilli flakes (red pepper flakes), lemon passion, herbs – such as fresh dill, parsley or thyme.
  • Include a pinch of smoked paprika, sumac or za’atar for colour and flavour
  • Drizzle with a little olive oil or honey


Can I make it ahead?
Yes, make the feta dip, then location in an airtight container in the refrigerator. It ought to keep for about 3 days.
