Who does not like an excellent chicken sheet pan supper? It fasts, it’s quickly, and there’s very little tidy up included. And I for one love this faster way gyro sheet pan supper.
The chicken is experienced oh-so-perfectly with kitchen spices– oregano, coriander, thyme, cumin, cayenne pepper, cinnamon, salt and pepper which then gets oven roasted in all its goodness. While that bakes, you can prep all your gyro garnishes– romaine, tomatoes, onion, cucumber and fell apart feta.
You can keep it as basic or as jam-packed of a gyro as preferred. And you can warm those flatbreads right in the oven while your chicken ends up cooking. Serve warm with homemade tzatziki sauce for a total rapid meal.
CAN I UTILIZE CHICKEN BREASTS?
Yes, chicken breasts can definitely be utilized here however chicken thighs have more dark meat and a greater fat material which will yield juicier, more tasty chicken.
DO I NEED TO COVER THEM IN PITA?
Not! These would go wonderfully covered in naan or perhaps tortilla!
CAN I MAKE THE TZATZIKI SAUCE AHEAD OF TIME?
Yes! My homemade tzatziki sauce can be reserved in the fridge till you’re all set to serve.
HOW CAN I SERVE THESE?
You can toss whatever onto a sheet pan, garnishes + tzatziki sauce consisted of, and serve. Highlight = you’ll have less meals to tidy!
- 3 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 1/2 teaspoons ground coriander
- 1 1/2 teaspoons dried thyme
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon ground cinnamon
- Kosher salt and newly ground black pepper, to taste
- 2 pounds boneless, skinless chicken thighs, cut into thin strips
- 1 1/2 tablespoons olive oil
- 1 tablespoon newly squeezed lemon juice
- 6 pita flatbreads
- 2 cups shredded romaine
- 2 cups cherry tomatoes, cut in half
- 1 red onion, very finely sliced
- 1 English cucumber, very finely sliced
- 1/2 cup fell apart feta cheese
- Tzatziki sauce, homemade or store-bought

Preheat oven to 450 degrees F. Gently oil a baking sheet or coat with nonstick spray.

In a little bowl, integrate garlic, oregano, coriander, thyme, cumin, cayenne pepper, cinnamon, 1 1/4 teaspoons salt and 1 teaspoon pepper.

Location chicken in a single layer onto the ready flat pan. Stir in olive oil and garlic mix; carefully toss to integrate.

Location into oven and bake for 25 minutes, or till the chicken is totally prepared through, stirring midway. Stir in lemon juice.

To serve, warm pitas in oven, about 4-5 minutes. Cut in half pitas, and fill with chicken, romaine lettuce, tomatoes, red onion, cucumber, feta and tzatziki sauce.
