This was the breakfast Chris and I picked, whilst feeling really hungover, after a night checking out a number of bars on a journey to Nashville. We were feeling rather fragile, and I didn’t actually believe I ‘d have the ability to handle more than a number of mouthfuls of anything for breakfast.

Well, I was incorrect. It was merely the very best avocado toast we had actually ever tasted. Plus we likewise felt a million times much better after consuming it.

I could not wait to recreate it when we got home, and this is the recipe I now utilize whenever I make avocado toast for breakfast.

PRO POINTER How to discover the best avocado

Finding great avocados appears to be harder in the UK than in the United States or other warmer nations. It can be a bit hit-and-miss in the UK. These are the important things I watch out for:

  • Hass avocados are the ones we see on the racks most in the UK. They have a really dark brown knobbly skin. You can likewise get avocados with lighter green skins, these can be unripe Hass avocados, or are frequently ‘Fuerte’ or ‘Ettinger’ ranges. Hass avocados have a mush richer taste, so I constantly opt for that range.
  • Feel the avocado and provide it a mild capture It must provide simply a little. If it’s rock tough it’s unripe, if it’s too squishy it’s overripe.
  • The skin must be rough, not smooth.
  • An additional check I make before utilizing the avocado, it to take out the little stem at the top of the avocado. If it’s hard to manage, the avocado isn’t ripe. If it comes off quickly, however the colour beneath is brown, it’s most likely the avocado is overripe. If the colour is green beneath and the stem comes of quickly, it must be ripe.

Flavour swaps/additions

  • A drizzle of extra-virgin olive oil – I often include this if my avocado isn’t as soft and buttery as I like it.
  • Crispy chopped-up bacon pieces – among Chris’s preferred additions
  • Attempt rubbing the toasted bread with a the cut-side of half a clove of garlic. This imparts a good garlicky flavour and a little bit of a bruschetta feel.
  • Really thin pieces of tomato. I like to opt for yellow or green heritage tomatoes ( yellow are rather mild-flavoured, green are a bit more appetizing) if I have them in, or I’ll often utilize thin pieces of red cherry tomatoes. Opt for your preferred range.
  • Swap out the fast pickled shallots with my marinaded red onions

Here are those beautiful marinaded onions (I include them to whatever – sandwiches, salads, on top of stews and curries, with barbeque food. They’re so great!!)

Marinated sliced red onions in a glass jar with a metal spoon sticking out. The jar is on a vintage steel surface.

In case you’re questioning, that coffee shop in Nashville was called 2 Hands Thanks for the inspo guys!
